Ok, a couple of years ago, I went with my Granny over to my cousin Jayne Fuller's house and we made pumpkin rolls. They are so good! And it's about that time of year to make some more! Thought I'd pass along the recipe :)
Pumpkin Rolls
3 Eggs (Beaten for 5 mins.)
1 Cup Sugar
2/3 Cup Pumpkin
1 tsp. Lemon Juice
Add:
¾ Cup Flour
½ tsp. Nutmeg
1 tsp. Baking Powder
1 tsp. Cinnamon
1 tsp. Ginger
½ tsp. salt
For Frosting:
6 oz. Cream Cheese
4 Tbs. Butter
½ tsp. vanilla
1 Cup Powdered Sugar
After mixing the Pumpkin Roll mix- pour into a greased and flour 9 X 13 pan. Bake at 375 degrees for 12 minutes. Cool for 15 minutes, and then roll in dish towel dusted with powdered sugar. Make frosting and spread in the middle, then re-roll (without the towel). Cut in pieces
